Blueberry Oat Smoothie Bowl

Do you ever have a hard time decided between having a smoothie or oatmeal for breakfast? Now you don’t have to choose!




This Blueberry Oat Smoothie Bowl is a cross between overnight oats and a smoothie. It is packed with protein, amino acids, adaptogens, antioxidants, healthy fats, and tons of fiber. Once blended, it ends up being a cool and creamy consistency perfect for serving in a bowl with plenty of room for toppings! Truth be told, I am not a huge fan of protein powders and never have been. When I went plant-based I tried a few protein powders and I found most of them to be chalky or filled with funky ingredients. Recently, I decided to try out Amazing Grass Pure Vanilla Superfood Protein Powder and I am seriously sold. It doesn’t have any overwhelming chalky tastes and blends wonderfully into smoothies! It also contains 20 grams of protein per serving and includes incredible nutritional content from the added greens powder.



To up the ante on this bowl, I was sure to include some of the essential daily nutritional components that are recommended as part of a healthy diet and just so happen to have superfood worthy qualities. I included oats for their beneficial fiber content, organic blueberries for their antioxidant properties, flaxseed meal for omega-3 fatty acids that are essential for healthy endothelial cell function, bananas for their potassium, cinnamon for its incredible antioxidant and anti-inflammatory properties, and maca powder that promotes proper hormone health.







Blueberry Oat Smoothie Bowl Recipe

Ingredients:

1/2 Cup Quick Cut Gluten-Free Oats

1 Cup Unsweetened Vanilla Almond Milk (Divided)

1/2 Cup Frozen Organic Blueberries

1 Frozen Organic Banana-slices or chunks

1 Tablespoon Flaxseed Meal1 Teaspoon Cinnamon

1 Teaspoon Maca Powder (optional)


Optional Toppings:

-Sprinkle of Thrive Market Organic Vanilla Cinna-Yum Granola

-Frozen Organic Blueberries


Instructions:

  1. Overnight, or a few hours before your meal, prepare the oats with ½ of unsweetened vanilla almond milk. The oats should absorb the liquid creating a creamy, pudding like consistency.

  2. Add frozen banana chunks, blueberries, flaxseed meal, maca powder, and ½ serving of Amazing Grass Pure Vanilla Protein Powder

  3. Blend all ingredients on Medium-High in a high-speed blender for about 60 seconds, adding in remaining almond-milk until your desired consistency is reached (I used the smoothie setting on my blend-tec)

  4. Transfer oat blend into a bowl (or two–this is a great recipe for sharing!) and top with desired toppings and enjoy!
